Coffee honey, produced in hives inside the coffee plantations during the flowering months from March to May, has a unique flavour and is a worldwide delicacy. The bees feed almost exclusively on the nectar of the flowers of coffee plants, which gives their honey special characteristics, such as a unique, light and delicious flavour and a more crystalline tone.
From the honeycomb to the packaging
When the honeycombs of each hive are full of honey, they are removed from the boxes and taken to a simple collection centre where, with a special knife, the cells and their valuable contents are separated from the original wax layer. To finish the extraction of honey, the layer is placed in a kind of dryer, which, by the action of centrifugal force, finishes cleaning them.
Each box, i.e. each hive, can produce up to 25 kilos of honey. At this point, wild honey can be consumed without any problem.
